What’s For Easter Dinner?

As I think I may have mentioned from time to time, I do all the cooking around here. Lately I haven’t been too ambitious, mostly sticking to old favorites. Typically, I do my most elaborate cooking on Thursday and Sunday evenings.

I’m not planning to get too fancy with our Easter dinner this year. My wife doesn’t care much for lamb, so I’ve decided to roast a chicken. I think I’ll stuff it with a mixture of bread crumbs, onions, smoked pork shoulder, and cream cheese, seasoned with black pepper and fresh rosemary. Steamed fresh asparagus and mashed potatoes will round out the meal. Perhaps a little pan gravy with a splash of port. I believe I have a semi-dry white wine around here somewhere, too.
