This morning as I was walking Nola we saw an enormous man, working in back of his house. He looked like the movie version of a carnival strongman—shaved head, enormous mustache. He was wrestling with a huge contraption, larger even than he, screwing lengths of pipe as legs into its bottom. “Is that a sink?”, I asked. I’m not shy or stand-offish. “I roast a lamb in this”, he replied in a strong accent which might have been Greek but sounded more Assyrian or Chaldean to me.
Today is Orthodox Easter. To all of my Orthodox friends, Christos aneste! Alethos aneste.
You can buy pre-made units at fairly decent prices on EBay. Have never done a whole lamb. Have helped do a pig. The Amish in our area will do cows.
