My wife is off on spring break. The other day a colleague of hers and her two children came over for lunch. We all had a lovely time. I served corn chowder and was asked for the recipe. Here it is!
Corn Chowder
6 servings
6 slices of bacon
1 medium onion
2 Tbsp. flour
2 potatoes
4 cups chicken stock
1 9 oz pkg. frozen corn
¼ tsp. thyme leaves
Salt and pepper to taste
½ cup milk
Peel and chop the onion. Slice the bacon crosswise into ¼” pieces. In a large saucepan saut� the bacon until almost crisp over medium heat. Remove the bacon from the saucepan and reserve. Remove half the bacon grease from the pan, leaving 2 Tbsp. Saut� the onions in the bacon grease until they are transparent. Add the flour and saut� for 2-3 minute minutes to make a roux taking care not to brown the onions. Blend in the chicken stock. Add the reserved bacon and the corn. Add the thyme. Peel the potatoes, cut them into ½” cubes, and add to the saucepan. Bring to the simmer and cook, uncovered, for twenty minutes, stirring occasionally. Add the milk. Bring the soup back up to the simmer and serve. Put the reserved bacon grease on the dogs’ dinners.
Total preparation time: 30-40 minutes
