Apricot Strudel

We have a regular Christmas routine. We go to the 5:00pm Mass on Christmas Eve at Queen of All Saints, our parish church, known variously as “the Basilica”, “Queens”, or “Queen of All Cadillacs” depending on whether you’re pious, affectionate, or sardonic. Then we come home and I prepare Spinach, White Beans, and Potatoes. We eat our dinner and retire early.

On Christmas morning we have a leisurely breakfast together and open our presents. Present-opening is usually accompanied by Don’s Ramos Fizzes. And my wife generally makes this apricot strudel.

Apricot Strudel

Makes 4 strudels

½ lb. butter
1 cup sour cream
2 cups sifted flour
1 large jar apricot jam (We like the results from using “No Sugar Added” jam)
Walnuts or pecans, chopped fine
Coconut, fine
Powdered sugar (optional)

  1. Mix the butter, sour cream, and flour and refrigerate overnight.
  2. Preheat the oven to 350°F.
  3. Divid the dough into four parts.
  4. Roll one part thin into rectangles about 4 inches wide and 10 inches long.
  5. Place the dough on a non-stick cookie sheet.
  6. Spread one quarter of the jam to one inch from the sides of the dough.
  7. Sprinkle with nuts and coconut.
  8. Fold the long sides together and carefully press the seam closed.
  9. Fold the short sides up and carefully press the seam closed.
  10. Repeat for the the remaining 3 strudels.
  11. Bake until golden brown—about 30 minutes.
  12. Allow the strudel to cool.
  13. Slice cross-wise.
  14. Sprinkle with optional powdered sugar.
