Stuffed Tomatoes

Last night I prepared stuffed tomatoes for our dinner. It’s been decades since I’ve had tomatoes that were worth stuffing.

I took two of my Cherokee Purples and stuffed them with a combination of couscous and spinach, seasoned with bacon, onions, and smoked cheddar. Preparation took a bit of time and trouble but the actual cooking time was only about a half hour.

They were delicious.

    Cherokee Purples are wonderful though I don’t think I’ve ever cooked them. They’re my favorites for Caprese salad.

    Did you do something different this year? I have probably had three bumper crops out of thirty years of planting tomatoes. Could use good advice.

    I can figure why we have good tomatoes one year and not os good the next either. Two years ago best crop ever in quantity and taste. Just average last year and this. I have only used the Cherokees to make gazpacho and sauces. They didnt totally fall apart when baked?

  • Not for me. But the baking time was only 20 minutes.
